The dish is perfect mix: a combination of flavours between the light sour of grapefruit, the soft sweet of green papaya and the fire of the chilli.

My aunt from the southern province of Tây Ninh recently visited Hà Nội. She brought us several dozen packages of fermented grapefruit, locally known as nem bưởi, a specialty and source of pride of the Tây Ninh people.

Từ tấm bé tôi đã mê, rất mê ăn bánh tráng cùng đồ cuốn, tức món gì đó cuốn (hay quấn) với bánh tráng gạo. Già đầu một chút, từ khẩu vị đã biết chọn lọc, phân biệt, khen chê trong ăn uống, tôi bèn lý sự nhằm chính thống hóa cho sở thích ẩm thực của mình. Rằng, Việt Nam có thức ăn chính, làm căn bản hàng đầu cho người Việt no bụng là cơm, cơm làm nền cho vô số các món ăn khác, gồm: mặn, canh, xào, kho, chiên, nướng, hấp, luộc…, rất đa dạng, phong phú. Theo bản sắc ẩm thực Việt Nam, cơm không chỉ có mặt ‘làm nền’ trong các bữa ăn thông thường hằng ngày mà cả trong dịp tiệc tùng, người mình cũng hay dùng gạo ngon nấu thêm chút cơm trắng để sẵn đó, để dành cho khách thích dùng cơm cho “chắc bụng”. Hanoï est considérée comme le paradis de la cuisine. Đã có mặt hơn chục năm ở một quãng vỉa hè đường Lê Văn Sỹ (quận 3), một hàng gỏi cuốn, bì cuốn được dân ăn vặt ở Sài Gòn đánh giá là rất hấp dẫn, ngon miệng.
Gọi là “hàng gỏi cuốn” nhưng thật ra đây chỉ là một cái gánh nhỏ với lỉnh kỉnh đủ thứ “đồ nghề” dành cho món cuốn. Trong tủ kính bày hàng, hàng trăm cuốn gỏi hay cuốn bì được làm sẵn dành cho khách mua đem đi cùng các loại nước chấm thích hợp cho từng loại cuốn… Rồi hai cái bàn nhỏ, chỉ cùng lúc đủ chỗ ngồi khoảng 5 – 10 người. Chả có thời nào như bây giờ: nghề thịt chó đang phát đạt rầm rộ bỗng chựng phắt lại ở khắp các quốc gia. Chủ trương vận động toàn dân không ăn thịt chó vừa ra đời đã được nhiều người hoan nghênh nhiệt liệt! Còn ở các trại chó cưng, chó cảnh, nông trại chó thì khỏi nói, chó được trân quý như vua!
Kỳ I – Khi chó chỉ là “cầy tơ”
Theo ước tính của các tổ chức bảo vệ động vật, và Liên minh bảo vệ chó Châu Á, thì Việt Nam đứng đầu Đông Nam Á về sở thích ăn thịt chó, với khoảng 5 triệu con chó bị xẻ thịt mỗi năm.
Đầu tháng 5, vài cơn mưa chuyển mùa, chiều xuống thì trời xám xịt, buồn buồn… Một anh bạn, gốc dân Quảng Ngãi, kiếm sống chỉ bằng mấy giờ dạy kèm Anh ngữ, có nhã ý mời tôi đi ăn một món đặc sản quê anh. Ngại cho túi tiền eo hẹp của anh, tôi từ chối thì anh nói ngay “rẻ thôi mà!”.
Cái quán xập xệ nằm ở đầu đường Bình Giả, quận Tân Bình. Chị chủ quán có vẻ trầm lặng, không đon đả chuyện trò với khách nên chúng tôi cũng ngại dù muốn gợi chuyện, hỏi vài câu, rằng chị ở vùng nào ngoài đó, cái món don hiếm thấy ở Sài Gòn này được chuyển vào như thế nào… Kìa, khá gây ấn tượng là mấy chữ “Don Quảng Ngãi” được ghi dõng dạc, to nét trên đầu cái bảng lớn treo trước quán. Rồi hầu như để cho đồng bộ, bên trong quán lại có thêm hai poster quảng cáo “Bia Dung Quất – Bia Quảng”, và tuyệt nhiên không thấy nhãn bia nào khác có mặt trên vách. Lâu nay, có một số người Sài Gòn, cứ vào mùa hè nóng nực là đi tìm mua mộng dừa, do đây là món ăn khoái khẩu gắn liền với tuổi thơ của họ ờ dưới quê. It is a well-known fact among Vietnamese that their home country has a rich portfolio of fermented food, from mắm chua (pickled shrimp) to mắm tôm (shrimp paste). Here is a comprehensive look into not only these funky condiments’ history, taste and production, but also the emerging food science behind them.
For thousands of years, Vietnamese cuisine has taken great pride in its arsenal of preserved foodstuffs.
